Yirgacheffe undergoes washed processing, roasted for brewing in a filter. Washed processing involves sorting the harvested cherries in water tanks, where they are separated by density. Unripe and overripe cherries float or sink to the bottom and are not used in the further process. The ripe cherries are then sent for depulping, where they are cleaned of skin and pulp. The beans, still covered in mucilage, are then placed in water tanks. Special bacteria are added to these tanks, which consume the mucilage, preventing the beans from starting to ferment. After this, the beans are sent for drying.
